Sugar-Free Plant-Based Cooking: The Stevia Playbook
How to cook and bake plant-based without sucrose or honey β exact stevia conversions, what breaks when you remove sugar, and how every Rootful recipe includes the swap.
Some people avoid sugar by preference. Others β because of sucrose intolerance, hereditary fructose issues, diabetes management, or a doctor's orders β can't have sucrose or honey at all, organic or not. Most recipe sites treat them as an afterthought. We built the swap into every recipe: each dish page shows either a stevia-based conversion for its sweeteners or a βsugar-free as writtenβ badge. (70 of our 103 dishes need no changes at all.)
The conversions that actually work
- Maple syrup β liquid stevia: 3β4 drops per teaspoon of maple, 10β12 per tablespoon. If the recipe needed maple's liquid, add the same volume of water or plant milk back.
- Table sugar β stevia powder: a level ΒΌ tsp of pure stevia powder β ΒΌ cup of sugar. Blends cut with erythritol measure closer to 1:1 β read the label.
- Dates β structure + stevia: in energy bars, dates are the glue, not just the sweet. Replace with extra oats and nut butter plus stevia and water β our Almond Date Power Bars page shows the exact rebuild.
- Dried fruit β freeze-dried or omit: raisins and sweetened cranberries are concentrated sugar; unsweetened freeze-dried berries plus 2β3 drops of stevia keep the character.
- Store sauces β clean versions: BBQ sauce and gochujang usually hide syrup. Buy no-sugar-added versions or make the two-minute substitutes in our recipe notes.
What breaks when sugar leaves β and the fix
Sugar isn't only sweet: it browns (caramelization), retains moisture, and adds bulk. Stevia does none of that, which is why naive swaps produce pale, dry baking. The fixes: keep one whole-fruit element (banana, applesauce, grated carrot) for moisture and browning; expect glazes to lacquer less β get color from the pan instead; and in doughs, restore lost bulk with the base ingredient, never more stevia (past its threshold it turns bitter, not sweeter).
Stevia itself, honestly
Stevia (from Stevia rebaudiana leaves) is 200β300Γ sweeter than sugar, carries zero glycemic load, and is available certified organic β which is why it's our house substitute rather than artificial sweeteners. Two practical notes: buy pure stevia (liquid or powder) rather than blends when you want our conversions to hold, and taste as you go β brands vary widely in strength.

Dishes with no added sweeteners say so outright, and none of our cold-pressed juices use any added sweetener β fruit and vegetables only.
