Low Sodium Vegan Meals: Why We Cap Every Dish at 500mg
Most 'healthy' recipes hide 1,200mg+ of sodium. Here's the case for a hard cap, the techniques that make low-salt food taste good, and a full menu built under 500mg.
Vegan does not mean low sodium. Restaurant plant-based bowls routinely carry 1,500mg+, a cup of canned soup can hit 900mg, and two tablespoons of regular soy sauce is ~1,800mg on its own. If you went plant-based partly for your blood pressure β whether you're fully vegan, vegetarian, or somewhere in between β sodium is where the label reading actually matters.
Why 500mg per meal?
The FDA's daily value for sodium is 2,300mg, and the American Heart Association's ideal target β especially for anyone managing blood pressure β is 1,500mg. Three meals capped at 500mg puts your cooked food at exactly the AHA ideal with zero arithmetic. That's the whole reason for our cap: not because 501mg is dangerous, but because a hard, legible ceiling is the only kind people actually keep.

How low-sodium food gets flavor (the honest version)
- Acid is the substitute, not herbs. Lemon, lime, and vinegars fire the same brightness receptors salt does. Nearly every dish here finishes with acid.
- Umami carries the load β browned mushrooms, tomato paste, nutritional yeast, and measured amounts of miso and low-sodium tamari deliver depth at a fraction of the sodium of salting to taste.
- Bloomed spices beat raw ones. Thirty seconds of cumin or smoked paprika in hot oil does more than a teaspoon of salt sprinkled at the end.
- Char and caramelization are free. A hard sear on cauliflower or tempeh builds flavor no shaker can.
- Distribute the salty ingredients. Olives, capers, and miso appear in our recipes in exact quantities so their sodium is budgeted, not banned.
The traps to watch
The sodium in a βhealthyβ vegan diet hides in five places: sauces (soy, teriyaki, BBQ), canned beans (rinse them β it removes up to 40%), bread (a bagel can be 450mg before toppings), vegetable broth (buy low-sodium or it's 800mg a cup), and anything from a deli counter. Cook from whole ingredients and you control all five β which is why every recipe here specifies low-sodium tamari, no-salt-added tomatoes, and low-sodium broth by name.
